Fried with curry leaves, butter, cooking oil and, salted egg yolk, this well known and sinfully delicious seafood dish can be eaten either by de-shelling the prawn or in its entirety, as it is very crunchy. With an irresistible aroma that can be sniffed from across the room, as its being prepared, salted egg prawns are a must-have for any self-respecting seafood lover.

How the dish is usually prepared?
Firstly, cooking oil is added onto a pan until it begins to heat. Next, coat the prawns with egg before coating them with flour. Fry until crispy before setting it aside. In a separate pan, heat up butter (1tbs) before adding curry leaves. Once the scent starts to fill the room, mashed egg yolks are added. Continue frying until bubbles start to form. Add in the prawns and stir it. Serve and enjoy!
Preparation time: 25 minutes
Note: Larger prawns are recommended as shrinkage during frying is common for these crustaceans. You wouldn’t want to end up with measly sized prawns after all that preparation would you?
